Burgundy winemaking couple most near and dear to our
hearts. Claire Naudin (Domaine Naudin-Ferrand) and Jean-Yves Bizot (Domaine Bizot) will be gracing us with their presence this month, and to celebrate, we’ve lined up three very special dinners with them both. There will be one dinner focused on each of their respective wines, plus a third one showcasing BiNaume, their joint négoce collaboration – which features not just one, but two verticals. Claire Naudin makes cerebral, lyrical, sensorial Burgundy like no other, crafting head-turning wines from what are typically considered “simpler” appellations. To people in the know, Claire is already a star, and one that they secretly hope others will not discover too quickly. We can say this without reservation: her winsome wines speak for themselves. They speak of a place, and they are articulate, but not pompous. They are light-footed, gentle and perfumed. And then, just before you empty your glass, they burst forth to reveal their roots and strength. These wines are charming, but serious, much like their creator. Though Claire works organically, she’s eschewed organic certification because she feels it misses the forest for the trees, so to speak. She’s very focused on the importance of originality and freedom, and perhaps that’s why she’s able to deliver such transcendent, soulful wines. Claire’s signature style — which marries florality with delectably pure fruit polished by gentle oak tone — shines through vividly every vintage. Her wines are fascinating to experience both in their youth as well as after some cellaring.
Jean-Yves Bizot needs almost no introduction at all: in the realm of fine Burgundy, he stands alone.The man and his wines are beyond compare – you can never think of his wines alongside anyone else’s. They are uniquely captivating and, quite literally, unfindable. In a world where a domaine’s success tends to be proportional to how many premiers and grands crus it makes, Domaine Bizot is an anomaly. And that doesn’t seem to affect the value of Bizot’s wines. If anything, the contrary holds ever true. Every parcel that Jean-Yves works on has been judiciously curated based on careful geological and cultural considerations, directed with an unwavering dedication to natural viticulture and shaped by one of the brightest minds in Burgundy. These wines are precious, and not just because they are exceedingly rare. A sip of Domaine Bizot’s wine is an unrepeatable sensorial experience, a place where intellect and emotion intersect and give rise to a unique sense of amazement — sometimes thrilling, sometimes beguiling, and always a privilege. They intrigue and seduce, and make you desire them in ways that defy explanation. Every bottle of Domaine Bizot is a vinous treasure worthy of personal reflection.
BiNaume is a project started by Claire and Jean-Yves in 2016, after a devastating Spring frost wiped out the majority of Claire’s crop. (The name is a pun on binôme – in French, binôme can mean ‘two names’, and travailler en binôme means to work in pairs.) The couple set off to find grapes from another region, that they could bring back to vinify in Burgundy. They eventually found what they were looking for in Saint-Pourçain, 200 km west of Beaune, in the neighbouring department of Allier. Gamay, Pinot Noir (and Chardonnay) are also planted natively here, so it felt like the right source for their new venture. Claire harvests the grapes herself, before they’re transported via refrigerated truck back to the domaine. She and Jean-Yves then vinify the fruit whole-cluster in cement tanks with no sulfur, with minimum extraction to favour the fruit and limit the extraction of tannins. These vibrant, exuberant wines not only offer incredible value; they also offer an immediacy that the more pedigreed Burgundies don’t always offer up quite as easily, along with a more wild, entrancing side of Claire’s style.
