is the sulfite-free vins naturels that are all the
fashion in France right now, and this part of the
region is attracting many young winemakers to
cultivate vineyards along these principles.

For a winemaker, Anders
Frederik Steen has an unconventional –
albeit rather impressive – resumé.
|
Before his entry into the world of winemaking, Anders was
a trained chef who became a sommelier, working at the best
restaurants in his native Denmark. He worked as sommelier
at the world-famous Noma,
then joined Noma alums to found the highly acclaimed
restaurant Relae
and then Manfreds,
both iconic culinary addresses in Copenhagen.
In 2013, Anders was inspired to leave his thriving career
in the world of gastronomy to move to the Ardèche region
in France in order to make wine full-time. And why not,
when his partner-in-crime in the winery startup was none
other than his favourite winemaker and personal hero, the
legendary and enigmatic Jura winemaker Jean-Marc Brignot.
Together, they produced his first two vintages, and to
this day, Anders still credits Brignot's invaluable
tutelage with shaping his winemaking philosophy. In 2015,
Brignot left the project to focus on his farming life in
Sado, Japan, while Anders remained with his family in the
beautiful village of Valvignères to continue making wines.

Curiosity runs deep in Anders’ blood, and his training
as a chef, along with his previous immersion in
Copenhagen’s creative gastronomic milieu, has helped
inform his winemaking process. Respecting raw organic
materials and reveling in the diversity of his produce are
the basis of his work in every vintage. As every year is
different, the expressions of the grapes and terroir are
never the same, and thus his approach will adapt
accordingly. Names, blends, and styles change annually
based on the flavours of the year’s produce. This is why
he has never made the same wine twice.
Anders insists that his wines are made with “grapes and
only grapes”. He sources his grapes from people he trusts,
such as the neighbouring Oustric family of Domaine Le
Mazel and the Bannwarth family in Alsace, while growing
his own vines too. He starts with a blank canvas at the
beginning of the harvest, tastes the grapes and follows
the flavours he finds most intriguing. The subsequent
steps are determined solely by that first taste.

something alchemical about the way Anders and Anne
make wine. In Anders’ words, he makes wine with
“grapes and only grapes”—but, I believe there’s also
a touch of magic.

Anders follows the thought process of a chef who tastes
the produce of the season, then works with the ingredient
to turn it into something interesting and more complete.
There are endless possibilities and a multitude of
decisions each season: what will make the season’s produce
shine? A single varietal wine or a blend? An extended
maceration or a quick pressing? Should the wine be bottled
early or left to rest for a few more years before release?
Winemaking here is of course absolutely minimalist.
Everything is done by hand. Or is it hands-off? Because
Anne and Anders do not interfere with the winemaking
process at all: they add nothing, and remove nothing. The
wines have complete freedom to be whatever they want to
be.
We always admire winemakers who have courage, but first
and foremost, we are convinced by quality. And these wines
have quality, a feat that is all the more remarkable given
that they are produced with such a daring
non-interventionist attitude. The minimalism also extends
to the bottle labels, which sport a stark and basic
design: these have become quite iconic and instantly
recognisable, with tongue-in-cheek names that are as
creative and original as the mind behind them.
Anders and Anne do not make a lot of wines, and
their reputation far eclipses the mere 15,000
bottles they produce each year. People everywhere
just can’t seem to get enough of them, and so we’re
overjoyed to share with you today their latest
collection, newly landed and available now.

These are delicious and imaginative natural wines, often
comprising unexpected varietal blends and/or raised with
unexpected winemaking choices. They have a sense of
unbridled expression that is refreshingly different; they
conform to no rules. Messengers of an
environmentally-conscious ethos, they’re as compelling for
their philosophy as for their unique and alluring
flavours.

notes:] “As always for
our rosés, it’s only direct pressing.
Fermentation in fibre cuves in our cellar
for nearly 10 months. No racking, all
fermentation has been on the yeast. Bottled
in June 2020. There is still a little bit of
sugar left (12 grams/L) and maybe it will
make some small bubbles. Very floral and
fruity rosé, in the style of “Freedom of
Peach” which we made in 2014. As we do not
rack, the flavours of the yeast are still to
be found, it gives like a taste of an
unfiltered Junmai Sake. Really interesting.”

“La femme à
qui?” 2019 –

notes:] “This PétNat
is 50% apple juice from an organic farm near
Valvignères and 50% juice of red grapes from
Domaine du Mazel (mainly merlot and cabernet
sauvignon). The juice of the grapes and the
apples have been co-fermenting since the
pressing of the apples. The colour is like a
rosé, light/peachy. Taste-wise, the nose
gives a sensation of cider, but on the
palate you’ll only find flavours of wine.
The mixture of flavours is very very
interesting. The bubbles are small and
delicate. There’s no sugar left, i.e., a dry
PétNat.”
“A beautiful shade of peach, this subtle,
delicate sparkling wine sits somewhere

notes:] “Assemblage of
both red and white grapes, mainly the juice
of macerated grapes, but also the last part
of white which was direct-pressed. The
fermentation took place in 500-L barrels for
almost 2 years, followed by no racking.
Bottled in July 2020. Maybe the darkest and
heaviest red wine we’ve ever made, however,
it’s not strong in alcohol nor carries
overpowering tannins. On the contrary, the
time in barrels has given the wine a round
and elegant finish.”

and moderate alcohol, the flavours here are
dark and brooding, with black and blue
fruits and earthy, forest floor notes at the

[Winemaker’s
notes:] “Only direct
pressing. A long and slow press lasting for
4 days in the old wooden pressoir of
Jocelyne & Gérald Oustric. This wine is
made from the last part of the juice of the
press, but without maceration. That said,
the juice has been exposed to a lot of
oxidation during the press and therefore the
wine has a colour between deep orange and
brown. The fermentation took place in a
500-L barrel in our cellar for almost 10
months. No racking. Bottled in July 2020.
You can say it’s an orange wine, but in fact
it’s not, as it hasn’t been macerated. Any
way, you feel the tannins from both the
grapes and the barrel in which the wine has
been fermenting. We like the dry bitterness
that balances very well with the acidity.”
“A deep, dark amber, the nose is heavy with
orange zest and all spice, the tannins firm
and the palate bone dry. This both softens
and blossoms with a little air, revealing

notes:] “Technically a
rosé, but we prefer to call it a red. It’s a
direct pressing of cabernet sauvignon. As
what we have been doing for some time now,
it’s a long and slow press for 3 days in the
old wooden pressoir of Gérald Oustric.
Fermentation took place in old barriques in
our cellar, lasting nearly 2 years. No
racking. Bottled the 1st of July 2020. A
very light red. Not a typical taste of
Cabernet Sauvignon, its flavours are closer
to Ploussard or a very light Gamay with some
age. It was the third year we pressed the
grapes directly like this, and we are very
happy with the result. We are often
searching for the light, fresh expression of
the rich southern fruit and in this wine we
think the balance is really nice.”

pressing taking the very first and the
free-run part of the juice from the press.
The following fermentation took place in old
barriques for nearly 2 years. No racking;
all fermentation has been on the yeast. It
has still a little bit of sugar left,
therefore both cork and crown cap on this
wine. Bottled in July 2020. A Blanc de Noirs
of Grenache Noir, with a little oxidative
style — not quite Jura-styled, just a little
very delicate oxidation. In the nose you
will recognise Grenache Noir, but on the
palate the wine has a rich structure and
long beautiful acidity, highly unusual for
Grenache Noir. Maybe more similar to what
you find in Chenin Blanc.”

notes:] “1½ day of
maceration, destemmed Carignan in the juice
of Sauvignon Blanc. Then following,
fermentation in barriques in our cellar for
nearly 3 years, no racking. All fermentation
has been on the yeast (sur lie). Bottled the
2nd of July 2020. A very light red wine,
normally we prefer to do much longer
macerations, but Carignan is a very
sensitive grape and can give out tannins too
quickly and lose its elegance. Therefore we
made the decision of a short maceration.
After décuvage the juice has been fermenting
in barriques which adds to the wine a style
of flavours akin to classical red burgundy.”

little red fruits and a long, lingering line

notes:] “With this
wine we have started like we did with the
whites from 2015. Two nights of oxidation of
the juice after the press, which means that
the juice is left in a big open container,
for the deposits to fall down and the
fermentation to start in good way. We
observed for the mousse of the fermentation
and followed it closely. Then 6 months of
fermentation outside in fibre cuves,
followed by 12 months of
fermentation/élevage in barriques (old
barrels of around 15 years of age). A long
fresh taste of citrus and white flowers,
with a light saltiness and bitterness from
the barrique. This wine has a little elegant
oxidative note.”
“This wows with lifted aromas of lime, white
flowers and spice with a pleasant bitterness

notes:] “100% direct
pressing. A long and slow press of 3 days in
the old wooden pressoir of Gérald Oustric.
The juice of the grapes was flowing off at
all times, so no maceration. Following
fermentation in old barriques in our cellar
for almost 4 years, there was no racking;
all fermentation has been on the yeast (sur
lie). Bottled on 1st of July 2020, still a
little bit of sugar left, therefore both
cork and crown cap on the bottles. A white
wine with a very solid and almost classic
expression, the long fermentation in
barriques has given the wine a nose similar
to white burgundy wines. Even with the sugar
that is left, the wine doesn’t ferment any
more and this helps to create a balance with
the acidity.”

Silence” 2016

[Winemaker’s
notes:] “25% destemmed
grapes of Pinot Noir and 75% direct-pressed
juice. Macerated for one night. Not enough
for the juice to take colour or tannins, but
of course the structure of the grapes. After
the press it was put directly into a fibre
cuve, then racking in June 2017 and
transferred to age in old barriques. Bottled
in July 2020, so a little more than 3 years
in barrels. Non ouillé, so no topping up the
barrels. We simply left the wine to take
oxidation. It is not vin jaune, but very
well oxidative. Still with a taste of white
fruits and long slatey bitterness – very
balanced.”
“Alsatian Pinot Noir . . . but not as you
know it. A wine of seemingly eternal youth,
it is lean, chiselled, and mineral, with
intense flavours of green citrus and a
saltiness that just seems to go on and on.
Breathtaking now, it will reward drinkers
