When describing the haunting seductiveness of
Burgundy wine, one village seems to be the
archetype of that special “Burgundian” experience:
Chambolle-Musigny.
Yet when reading about the recent renaissance of
various Burgundy domaines, we have seen very few
mentions of the resident families of Chambolle.
|
But now a dynamic domaine has emerged in Chambolle, and is
proudly carrying the village flag high. The estate's
exceptional vineyard holdings are nurtured by a close-knit
family — faithful stewards with irreproachable work ethics
whose new generation is making better wines than ever. This
domaine is Domaine Amiot-Servelle.
The domaine was originally founded by Clément Tachot in
1920. His son-in-law, Jean Servelle, subsequently took over,
renaming it to Domaine Servelle-Tachot in honour of the
union of the two families.

married Christian Amiot,
son of the famous Morey-Saint-Denis producer Pierre Amiot.
Christian began working at the domaine with his
father-in-law. Due to Jean Servelle’s insistence on avoiding
herbicides, Christian spent many backbreaking days in the
vineyards each year armed with a hoe. These formative
training years remained with him as he continued his
father-in-law’s philosophy of purist viticulture. When Jean
Servelle passed away in 1989, Christian took over and the
domaine was renamed Domaine
Amiot-Servelle.

The domaine’s vines are located mostly in Chambolle-Musigny.
It was just 6.3 hectares when Christian took over, before
another hectare was added in 2010 from his (Morey) side of
the family comprising a village Morey-Saint-Denis as well as
the Clos-Saint-Denis and Charmes-Chambertin grands crus.
Without a doubt, their Chambolle wines are what
Amiot-Servelle is renowned for — and deservedly so. They
produce a village Chambolle from 2.3 ha of vines located
primarily in the excellent lieu-dit Les Bas Doix
which lies below the 1er Cru Les Amoureuses. The
domaine also bottles seven different premier crus starting
with tiny parcels in 1er Cru Derriere la Grange,
1er Cru Les Plantes, 1er Cru Les Fuées and
1er Cru Les Feusselottes. Their largest holding of
Chambolle premier cru is in Les Charmes, a vineyard
recognised as being the yardstick for classic Chambolle. The
top producers there make a wine that is medium-bodied, ripe,
juicy and elegant, qualities that characterise
Amiot-Servelle’s version. In the 2017 vintage, a new
bottling of the premier cru Les Borniques debuted
for the first time.
The top premier cru Chambolle produced by Amiot-Servelle is
the vaunted Les Amoureuses. The domaine’s parcel is
0.45 ha in size and vine age is on average about 45 years
old. Although there are over 30 different producers with
bottlings of Les Amoureuses, the best ones
invariably come from producers who own their parcels rather
than from those who purchase the fruit.
The domaine had long been run on organic principles but it
was not until 2003 that they started to scrutinise every
aspect of their practices. The first steps towards formal
certification were made in 2005, and they attained their
certification in 2008. Presently,
Domaine Amiot-Servelle remains the only
certified organic producer in Chambolle-Musigny.
The vineyards are ploughed often and organic compost is used
to feed the soil. A rigorous debudding is performed in the
spring. Gentle extraction ensures avoidance of green tannins
in the final wine, while the decision as to when to take the
juice off the skins is based purely on a function of taste.
The press wine is almost always incorporated, at which point
the wines are put into barrels. The wines spend 18 months in
barrels, of which no more than 50% are new. They are racked
once after about a year and bottled in March or April
without fining and usually without filtration.
The transition to the next generation commenced with the
arrival of Christian’s daughter Prune Amiot in 2011.
This spirited vigneronne has brought a more sensitive touch
to the vinification aspect of the domaine, turning out
finer, more precise expressions from each terroir, without
sacrificing the age-worthiness for which her father’s wines
are renowned. The improvements are palpable with each
passing vintage. Her brother Antoine joined her at
the domaine a few years later. Today, while Christian
remains active in the vineyard, the handover to the next
generation has been completed, making this fully a family
operation.
The domaine’s wines always taste fresh and polished although
there is not too much reliance on new oak — 20% new wood is
used for the village wine and up to 50% for the two top
premiers crus. There are precise and lifted aromatics, as
well as animated and well-delineated flavours, an
affirmation of the gentler approach to vinification as well
as the success of organic viticulture. While these wines
tend to exemplify the understatement and elegance of
Chambolle, they also possess a keen, fine structure. Every
wine has a latent intensity and yet they never come across
as ponderous or austere. We are not alone in this

year. It has a wonderful, almost entrancing
bouquet of exquisite, mineral-rich black and
blue fruit and seamlessly integrated oak.
The palate is medium-bodied with
fine-grained tannin. There is a patina of
oak to be assimilated, but the confit-like
finish is lovely, with hints of fresh fig
furnishing the persistent aftertaste. A
gorgeous Les Amoureuses from
