Spirited Chambolle beauties of stunning elegance and precision

Prune Amiot and her brother Antoine are now leading this organic domaine
open-quote A very fine and wide range of Chambolle wines (and more!) from this small producer. Very much worth your time . .
— Bill Nanson, Burgundy Report

Amiot-Servelle is one of those domaines that has just found its groove, located its mojo in recent vintages and given their enviable holdings that include Chambolle Amoureuses, Clos Saint-Denis and Charmes-Chambertin, there is inevitably going to be great wine pouring out of this address.

When describing the haunting seductiveness of Burgundy wine, one village seems to be the archetype of that special “Burgundian” experience: Chambolle-Musigny.  Yet when reading about the recent renaissance of various Burgundy domaines, we have seen very few mentions of the resident families of Chambolle.

But now a dynamic domaine has emerged in Chambolle, and is proudly carrying the village flag high. The estate's exceptional vineyard holdings are nurtured by a close-knit family — faithful stewards with irreproachable work ethics whose new generation is making better wines than ever. This domaine is Domaine Amiot-Servelle.

The domaine was originally founded by Clément Tachot in 1920. His son-in-law, Jean Servelle, subsequently took over, renaming it to Domaine Servelle-Tachot in honour of the union of the two families.

Jean’s daughter Elisabeth Servelle married Christian Amiot, son of the famous Morey-Saint-Denis producer Pierre Amiot. Christian began working at the domaine with his father-in-law. Due to Jean Servelle’s insistence on avoiding herbicides, Christian spent many backbreaking days in the vineyards each year armed with a hoe. These formative training years remained with him as he continued his father-in-law’s philosophy of purist viticulture. When Jean Servelle passed away in 1989, Christian took over and the domaine was renamed Domaine Amiot-Servelle.

The domaine’s vines are located mostly in Chambolle-Musigny. It was just 6.3 hectares when Christian took over, before another hectare was added in 2010 from his (Morey) side of the family comprising a village Morey-Saint-Denis as well as the Clos-Saint-Denis and Charmes-Chambertin grands crus.

Without a doubt, their Chambolle wines are what Amiot-Servelle is renowned for — and deservedly so. They produce a village Chambolle from 2.3 ha of vines located primarily in the excellent lieu-dit Les Bas Doix which lies below the 1er Cru Les Amoureuses. The domaine also bottles seven different premier crus starting with tiny parcels in 1er Cru Derriere la Grange, 1er Cru Les Plantes, 1er Cru Les Fuées and 1er Cru Les Feusselottes. Their largest holding of Chambolle premier cru is in Les Charmes, a vineyard recognised as being the yardstick for classic Chambolle. The top producers there make a wine that is medium-bodied, ripe, juicy and elegant, qualities that characterise Amiot-Servelle’s version. In the 2017 vintage, a new bottling of the premier cru Les Borniques debuted for the first time.

The top premier cru Chambolle produced by Amiot-Servelle is the vaunted Les Amoureuses. The domaine’s parcel is 0.45 ha in size and vine age is on average about 45 years old. Although there are over 30 different producers with bottlings of Les Amoureuses, the best ones invariably come from producers who own their parcels rather than from those who purchase the fruit.

The domaine had long been run on organic principles but it was not until 2003 that they started to scrutinise every aspect of their practices. The first steps towards formal certification were made in 2005, and they attained their certification in 2008. Presently, Domaine Amiot-Servelle remains the only certified organic producer in Chambolle-Musigny.

The vineyards are ploughed often and organic compost is used to feed the soil. A rigorous debudding is performed in the spring. Gentle extraction ensures avoidance of green tannins in the final wine, while the decision as to when to take the juice off the skins is based purely on a function of taste. The press wine is almost always incorporated, at which point the wines are put into barrels. The wines spend 18 months in barrels, of which no more than 50% are new. They are racked once after about a year and bottled in March or April without fining and usually without filtration.

The transition to the next generation commenced with the arrival of Christian’s daughter Prune Amiot in 2011. This spirited vigneronne has brought a more sensitive touch to the vinification aspect of the domaine, turning out finer, more precise expressions from each terroir, without sacrificing the age-worthiness for which her father’s wines are renowned. The improvements are palpable with each passing vintage. Her brother Antoine joined her at the domaine a few years later. Today, while Christian remains active in the vineyard, the handover to the next generation has been completed, making this fully a family operation.

The domaine’s wines always taste fresh and polished although there is not too much reliance on new oak — 20% new wood is used for the village wine and up to 50% for the two top premiers crus. There are precise and lifted aromatics, as well as animated and well-delineated flavours, an affirmation of the gentler approach to vinification as well as the success of organic viticulture. While these wines tend to exemplify the understatement and elegance of Chambolle, they also possess a keen, fine structure. Every wine has a latent intensity and yet they never come across as ponderous or austere. We are not alone in this observation. Wine writers have taken note.

Bourgogne Chardonnay 2017
S$ 60 / 750 ml
36 bottles
“A markedly fresh and cool if mildly fruity nose is trimmed in background hints of citrus that carry over to the relatively concentrated and fleshy flavors that deliver solid persistence on the attractively dry and clean finale. This should be capable of rewarding a year of bottle age if that's your preference.” Allen Meadows

Produced from three parcels in Chambolle on the other side of the Route Nationale, towards Gilly. No whole-clusters in this.
“A faintly saline nose with direct red fruit – really positive freshness. Round, open, there’s a depth to this. Elegant but with a good depth of flavour, some herb on the mix, almost a wild strawberry. Very long – impressively so.” Bill Nanson

“All from Chambolle. This is easy and fresh. I think you can taste how perfect the vintage was from this. Bright crunchy cherries for days.” thisyoungwine.com

S$ 107 / 750 ml for 3-bottles and up
S$ 113 / 750 ml
66 bottles
From several parcels: most of Bas Doix, a little Cras just above Musigny, Les Drazey, Les Bussières and Les Danguerrins. 10% whole-cluster.
“. . more expressive on the nose than the Morey-Saint-Denis, offering blackberry, raspberry and light loamy aromas. The palate is well balanced, the 30% new oak nicely integrated. The charming, open-knit finish suggests this will drink sooner rather than later.” Vinous

“Pretty if marked restrained aromas speak of both red and dark pinot fruit along with soft spice and earth nuances. The sleek and delicious flavors possess a lovely sense of detail as well as a subtle minerality that suffuses the slightly more complex and persistent finale. This elegant effort is very Chambolle in style.” Allen Meadows

Chambolle-Musigny 1er Cru “Les Charmes” 2017
S$ 167 / 750 ml for 3-bottles and up
S$ 176 / 750 ml
72 bottles
From three separate parcels with a total surface area of 1.15 ha.
“. . containing 10% whole bunches, has an expressive, well-defined bouquet, the fruit a little darker than other Premier Crus from the domaine and hints of marmalade and quince surfacing with aeration. The taut, focused palate is quite effervescent on the entry, with a fine thread of acidity, but shows commendable depth on the orange zest and citrus-like finish. Great potential here.” Neil Martin

“A lovely fresh width of aroma, slowly adding a clarity of fresh red fruit, halfway between strawberry and cherry. More mid and finishing weight – more than the Fuées – though less overt concentration. However, this is a more textural wine than the Fuées and it delivers a super burst of finishing flavour and it’s so persistent too – bravo.” Bill Nanson
NEW CUVÉE (RARITY)
Chambolle-Musigny 1er Cru “Les Borniques” 2017
S$ 210 / 750 ml
24 bottles
This is the first time that a standalone cuvée has been separated out. The vines are located at the village end of Le Musigny, and the wine was made with 100% whole clusters but without new oak. Only about 500 bottles made.
“Some rose in a roundness of fine aroma, of wild strawberry too. Mineral but again with a mouth-watering presence, faintly touched by a grain of ripe tannin – a wine to wallow in. So good . . Intense and long finishing . .” Bill Nanson

“The 2017 Chambolle-Musigny Les Borniques 1er Cru is the maiden vintage from the domaine’s 0.11 hectares of vines, 100% whole bunches matured in a single 400-liter barrel. It has a gentle but expressive, well-defined bouquet of cranberry and raspberry scents infused with sous-bois. The medium-bodied palate is fresh and vibrant, offering quite pointed acidity and a taut, linear finish. This is a fine Borniques . .” Neil Martin
Amiot-Servelle_Chambolle_1er_Derriere_la_Grange_(this_is_vintage_2011)

Chambolle-Musigny 1er Cru “Derrière la Grange” 2017
S$ 246 / 750 ml
18 bottles
From a 0.25 ha parcel; Amiot-Servelle is one of only two proprietors. 20% whole cluster.
“A tighter core of aroma but faintly spiced. Another wine that’s more structural, a little spice on the palate too, saline and ridiculously complex. A baby with so much to see. Really a little young for now but great wine!” Bill Nanson

“The 2017 Chambolle-Musigny Derrière La Grange 1er Cru, which contains 20% whole bunches, has a very pure black currant and raspberry preserve bouquet, quite tight at the moment but nicely focused. The palate is medium-bodied with gentle grip on the entry, offering a mélange of red and black fruit mixed with orange peel, clove and bay leaf and leading to a poised, quite persistent finish. Excellent.” Neil Martin
Amiot-Servelle_Charmes-Chambertin

Charmes-Chambertin Grand Cru 2017
S$ 315 / 750 ml
4 bottles
From a 0.18 ha parcel in Mazoyères, Very old vines, fully destemmed.
“A very wide nose, also a little burst of florals with swirling. Hmm, that’s a lovely freshness and it’s complex too. I so rarely say ‘bravo’ to Charmes, but here yes!” Bill Nanson

“There is an attractive freshness to the earthy essence of various wild red berries. The delicious and more concentrated big-bodied flavors exhibit impressive power and punch while delivering solid depth and complexity on the dusty and balanced finale.” Allen Meadows
Amiot-Servelle_Chambolle_1er_Amoureuses_(this_is_vintage_2015)

Chambolle-Musigny 1er Cru “Les Amoureuses” 2017
S$ 422 / 750 ml
12 bottles
From a 0.45 ha parcel of 45+ year old vines. 30% whole cluster.
“The 2017 Chambolle-Musigny Les Amoureuses 1er Cru includes 30% whole bunches this year. It has a wonderful, almost entrancing bouquet of exquisite, mineral-rich black and blue fruit and seamlessly integrated oak. The palate is medium-bodied with fine-grained tannin. There is a patina of oak to be assimilated, but the confit-like finish is lovely, with hints of fresh fig furnishing the persistent aftertaste. A gorgeous Les Amoureuses from Amiot-Servelle.” Neil Martin

“An exuberantly spicy and beautifully broad-ranging nose is comprised by notes of plum, violet and a mix of both red and dark currant scents. The strikingly textured and sophisticated middle weight flavors also exude a fine bead of minerality that becomes more palpable as the mouth coating finish sits on the palate. Excellent and this too should age effortlessly.” Allen Meadows
