everyday operation, as some of the wines are made in
a time-consuming but also quality oriented way that
can best be described as borderline crazy or, more
generously, with an extreme focus on quality and
detail.

Burgundy continues to evolve with a continuous
stream of talented and ambitious growers trying to
chart a direction for its future. These growers
may represent a new generation of sons and
daughters taking over their family domaines, or
resourceful new micro-negociant startups, or in
the case of this tiny address nestled in
Nuits-Saint-Georges, a bit of both.

Domaine Moron-Garcia is owned and managed by Mathieu
Moron and Pierre-Oliver Garcia, who in their
modest-sized cellar in Nuits-Saint-Georges are making some
fabulous wines that have gotten Burgundy sleuths and
trainspotters all excited of late.
Before starting out with their venture, these childhood
friends had been working at different domaines,
coincidentally both as viticulturists. Mathieu was the
vineyard manager at Domaine
D’Eugenie (formerly Domaine René Engel) while
Pierre-Olivier (who is the son of Burgundy’s leading
geologist Jean-Pierre Garcia, a close colleague of Jean-Yves
Bizot) was at Château de Prémeaux.
Domaine Moron-Garcia was born when Mathieu’s father gave him
a small parcel of vines in Nuits-Saint-Georges. The friends
immediately proceeded to buy a house in the centre of Nuits
town and promptly converted it into a winery. The first
vintage for the estate was 2016, in which they produced a
microscopic quantity of 2,700 bottles.
As with most of their generation, care for the environment
is a top priority for this duo. Mathieu and Pierre-Olivier
have sought to restore biodiversity in the vineyards,
something they feel has been lost in the region due to the
focus on single-crop farming. Their ‘eco-attitude’ means
they experiment with growing cereal crops, ploughing with
horses, planting trees and even using chickens to graze the
land, in an attempt to bring back bees and butterflies to
their owned vineyards. In their own words, their wine estate
is “dedicated to agro-experimentation”.
To supplement their tiny crop, they also source grapes from
a network of grower friends with whom they work very
closely. It goes without saying that the vines are also
farmed organically and they must be no less than 30 years
old. Mathieu and Pierre-Olivier closely track the
viticultural process of those vineyards and are directly
involved during the harvest.
With vineyards that cover 2.5 hectares, this boutique
outpost produced just over 9,000 bottles in 2018. (This
level of diminutiveness reminds us of Domaine Bizot, but we
digress.)

What sets these guys apart from other wineries is their
obsessive care and attention to detail, which is bordering
on crazy by most definitions. It took 50 people 10 days to
harvest and hand-sort the grapes for their meagre 2.5
hectares.
However, if there is one thing that defines the spirit of
innovation and perfectionism at Moron-Garcia, it is this: a
rigorous and painstakingly manual destemming process using
scissors, referred to as baie
par baie (or berry by berry), in which
they trim each grape off the stem one at a time, leaving
intact only the very end of the stem that is attached to the
berry. This technique takes 30 people an entire day to
complete one single barrel, yet the duo think this is worth
it as it results in enhanced aromas and complexity in the
finished wine.
Moron-Garcia are advocates of low-intervention winemaking,
and fermentation is carried out spontaneously by wild
yeasts. In the cellar they work with gravity so the wine is
never pumped from tank to tank. They use no new oak,
believing its character inhibits the wine’s ability to
express its origin. Barrel ageing lasts for 12 months. Only
once during the whole process is sulphur added to stabilise
the wine.

Last November, we visited the domaine to check out how the
2018s were doing. The wines were all already in vat, waiting
for bottling. What struck us immediately was just how small
the winery was and that the assembly vats they were using
looked more like toys compared to the regular vats we see at
other places. Pierre-Olivier drew each wine as he guided us
through the tasting.
The wines had an immense concentration about them, lush and
sweet, telling of the vintage, but with a crunchy quality
that kept them light on their feet. They delivered freshness
and terroir details with impressive articulation. Their
expressions are unique; we could not liken them to the style
of any Burgundy we have ever tasted. There is a sense of
modernity around them, not in terms of the way the wine was
dressed, but in terms of their upbeat, dynamic disposition;
you just know these were the brainchild of fresh, ambitious
minds. Yet there is also a steadfast, serious aspect to the
wines that is reassuringly old school, a nod to the heritage
of the land. They have gumption and an undeniable
sophistication, all of the elements coexisting in harmony
even at this stage in their lives. These wines will age
beautifully.
We don’t find a domaine as exciting
as this very often anywhere, much less in the deeply
traditional region of Burgundy. And so it is with
great pleasure and excitement that we share with you
today our first allocation from the super boutique Domaine Moron-Garcia. The
intimately sized debut offering of their grandiose
2018s has now landed. Do not miss these truly
cutting-edge next-generation burgundies.

It is heartening to see that our dearest wine region
continues to thrive and innovate, and this duo proves the
point. There is energy and vibration in the wines. You can
taste the accents of the soil, its minerality and the charm
of the naked fruit since they’re not cloaked in high doses
of sulphur. Regardless of the appellation, they are swimming
in finesse and rendered in high-fidelity detail.
