Burgundy’s “it” boys take hand-crafting to the max

open-quote This is not an everyday operation, as some of the wines are made in a time-consuming but also quality oriented way that can best be described as borderline crazy or, more generously, with an extreme focus on quality and detail.

Burgundy continues to evolve with a continuous stream of talented and ambitious growers trying to chart a direction for its future. These growers may represent a new generation of sons and daughters taking over their family domaines, or resourceful new micro-negociant startups, or in the case of this tiny address nestled in Nuits-Saint-Georges, a bit of both.

Domaine Moron-Garcia is owned and managed by Mathieu Moron and Pierre-Oliver Garcia, who in their modest-sized cellar in Nuits-Saint-Georges are making some fabulous wines that have gotten Burgundy sleuths and trainspotters all excited of late.

Before starting out with their venture, these childhood friends had been working at different domaines, coincidentally both as viticulturists. Mathieu was the vineyard manager at Domaine D’Eugenie (formerly Domaine René Engel) while Pierre-Olivier (who is the son of Burgundy’s leading geologist Jean-Pierre Garcia, a close colleague of Jean-Yves Bizot) was at Château de Prémeaux.

Domaine Moron-Garcia was born when Mathieu’s father gave him a small parcel of vines in Nuits-Saint-Georges. The friends immediately proceeded to buy a house in the centre of Nuits town and promptly converted it into a winery. The first vintage for the estate was 2016, in which they produced a microscopic quantity of 2,700 bottles.

As with most of their generation, care for the environment is a top priority for this duo. Mathieu and Pierre-Olivier have sought to restore biodiversity in the vineyards, something they feel has been lost in the region due to the focus on single-crop farming. Their ‘eco-attitude’ means they experiment with growing cereal crops, ploughing with horses, planting trees and even using chickens to graze the land, in an attempt to bring back bees and butterflies to their owned vineyards. In their own words, their wine estate is “dedicated to agro-experimentation”.

To supplement their tiny crop, they also source grapes from a network of grower friends with whom they work very closely. It goes without saying that the vines are also farmed organically and they must be no less than 30 years old. Mathieu and Pierre-Olivier closely track the viticultural process of those vineyards and are directly involved during the harvest.

With vineyards that cover 2.5 hectares, this boutique outpost produced just over 9,000 bottles in 2018. (This level of diminutiveness reminds us of Domaine Bizot, but we digress.)

Grapes which had been destemmed baie par baie (i.e., berry by berry)

What sets these guys apart from other wineries is their obsessive care and attention to detail, which is bordering on crazy by most definitions. It took 50 people 10 days to harvest and hand-sort the grapes for their meagre 2.5 hectares.

However, if there is one thing that defines the spirit of innovation and perfectionism at Moron-Garcia, it is this: a rigorous and painstakingly manual destemming process using scissors, referred to as baie par baie (or berry by berry), in which they trim each grape off the stem one at a time, leaving intact only the very end of the stem that is attached to the berry. This technique takes 30 people an entire day to complete one single barrel, yet the duo think this is worth it as it results in enhanced aromas and complexity in the finished wine.

Moron-Garcia are advocates of low-intervention winemaking, and fermentation is carried out spontaneously by wild yeasts. In the cellar they work with gravity so the wine is never pumped from tank to tank. They use no new oak, believing its character inhibits the wine’s ability to express its origin. Barrel ageing lasts for 12 months. Only once during the whole process is sulphur added to stabilise the wine.

open-quote Moron-Garcia produces vivid, energetic wines with character and substance. The wines have lovely complexity and a style unique to the estate, and they are made with refinement and a lovely expression of terroir.

Pierre-Olivier_Garcia
Pierre-Olivier Garcia leading us on a tasting last November

Last November, we visited the domaine to check out how the 2018s were doing. The wines were all already in vat, waiting for bottling. What struck us immediately was just how small the winery was and that the assembly vats they were using looked more like toys compared to the regular vats we see at other places. Pierre-Olivier drew each wine as he guided us through the tasting.

The wines had an immense concentration about them, lush and sweet, telling of the vintage, but with a crunchy quality that kept them light on their feet. They delivered freshness and terroir details with impressive articulation. Their expressions are unique; we could not liken them to the style of any Burgundy we have ever tasted. There is a sense of modernity around them, not in terms of the way the wine was dressed, but in terms of their upbeat, dynamic disposition; you just know these were the brainchild of fresh, ambitious minds. Yet there is also a steadfast, serious aspect to the wines that is reassuringly old school, a nod to the heritage of the land. They have gumption and an undeniable sophistication, all of the elements coexisting in harmony even at this stage in their lives. These wines will age beautifully.

We don’t find a domaine as exciting as this very often anywhere, much less in the deeply traditional region of Burgundy. And so it is with great pleasure and excitement that we share with you today our first allocation from the super boutique Domaine Moron-Garcia. The intimately sized debut offering of their grandiose 2018s has now landed. Do not miss these truly cutting-edge next-generation burgundies.

It is heartening to see that our dearest wine region continues to thrive and innovate, and this duo proves the point. There is energy and vibration in the wines. You can taste the accents of the soil, its minerality and the charm of the naked fruit since they’re not cloaked in high doses of sulphur. Regardless of the appellation, they are swimming in finesse and rendered in high-fidelity detail.

The offer is valid until 23 June 2020. Orders will be processed subject to remaining availability and final written confirmation. Moron-Garcia_Brouilly_La_Folie_2018

Brouilly “La Folie” 2018
S$ 58 / 750 ml
26 bottles
A Cru Beaujolais, 10% whole cluster. 2,772 bottles produced.
“Fine, vivid balance and a lovely freshness. The palate offers delightful fruit, with a spicy impression from the lees (light caramel and fennel) supported by lovely acidity. This is delicious.” Steen Öhman
“Closed nose, but the palate delivers charming and immediate black fruit with a touch of beef stock lending a really lovely savoury flavour. Not cheap for a Beaujolais, but delivers plenty of intensity.” Richard Hemming, MW
Moron-Garcia_Marsannay_Clos-du-Roy_2018

Marsannay “Clos du Roy” 2018
S$ 95 / 750 ml
33 bottles
25% whole cluster, 12 months in once-used French oak. 1,263 bottles produced.
“. . an intense and powerful wine for this level. Its fruity and deep character show fine mineral expression. One-quarter whole-cluster in this cuvée gives a fine expressive bouquet and a fresh floral character in this rather saturated vintage.” Steen Öhman
“Succulent red fruit with a touch of vegetal character lurking beneath, and lots of coarse-grained tannin that really covers the palate. Moderate length, strong fruit intensity – a good candidate for the longer term.” Richard Hemming, MW
Moron-Garcia_NSG_Les_Grandes_Vignes_2018

Nuits-Saint-Georges “Les Grandes Vignes” 2018
S$ 112 / 750 ml for 3-bottles or more
S$ 118 / 750 ml
55 bottles
75% destemmed, 25% baie-par-baie (berry-by-berry). 1,492 bottles produced.
“. . a rich and vivid wine. This has a delightful intensity . . Tremendous depth and purity of fruit – Moron-Garcia again find that extra sparkle in the fruit and the purity of the grapes harvested. Excellent work – delightful energy and verve.” Steen Öhman
“Deep and intense, this is a really powerful Nuits here with a velvety mouthfeel. This wine is immense. Thankfully, low-intervention winemaking and zero new oak keep the wine lively. Dark currant, blackberry and wet soil mark the palate, expressed with purity, sprightly energy and superb definition — all in spite of its remarkable concentration. This will require some laying down; there’s just so much stuffing that needs to unfurl.” AC
Moron-Garcia_NSG_Charmois_2018

Nuits-Saint-Georges “Les Charmois” 2018
S$ 132 / 750 ml
7 bottles
70% baie-par-baie (berry-by-berry), 15% whole cluster, 15% destemmed. 338 bottles produced.
“. . another special cuvée coming from the area above the town of Nuits-Saint-Georges. This has an elegant and vivacious style, and is quite cool for 2018. The vines are located high above the village. The baie-par-baie gives this wine an extra edge and vivacity – a sparkle even – that is so important in a vintage like 2018. This is brilliant juice.” Steen Öhman
“The stemminess adds a delicious sappy character to the palate, combining well with the ripe red fruit. Lots of tannin, although it's less coarse than their Marsannay Clos du Roy, and as such should be approachable earlier. Long, deep black fruit on the finish.” Richard Hemming, MW
Moron-Garcia_Beaune_1er_Tuvilains_(this_photo_is_2017_vintage)

Beaune 1er Cru “Les Tuvilains” 2018
S$ 142 / 750 ml
10 bottles
50% whole cluster. Only about 2 barrels produced.
“. . is typically Beaune, with rich and earthy fruitiness. Fifty percent whole-cluster in the 2018 vintage gives the wine a vibrant, floral intensity. It’s long and energetic, offering plenty of vivid fruit, and underlining the potential quality of Beaune wines. Gorgeous mid-palate feel.” WH 90-92
“There’s a little bit of farmy funk on the nose, and an intriguing slatiness too – this captures the esoterica of good burgundy, with unusual and charismatic non-fruit flavour, but without sacrificing the balance of primary fruit. Very nicely done.” Richard Hemming, MW
Moron-Garcia_Corton_baie-par-baie_2018

Corton Grand Cru “Cuvée Baie Par Baie” 2018
S$ 265 / 750 ml
24 bottles
1/3 baie-par-baie (berry-by-berry), 1/3 whole-cluster, 1/3 destemmed. 922 bottles produced
“It’s intense, deep and quite floral – with very energetic and vibrant fruit. In my view a top end Corton: I adore the silky fruit and the mid-palate energy. Baie-par-baie rules!” WH 93-94
