Today,
Thierry runs the domaine with his sister Chrystelle
— he handles all aspects of production while she is in
charge of the business side. Together they have supercharged
this highly respected Chassagne-Montrachet domaine to its
present enviable stature. The Pillot siblings share not only
a deep respect for the history of their domaine but also a
powerful desire to keep improving upon the successes of
previous generations.
The history of DOMAINE PAUL PILLOT
dates back to the later part of the 19th century when
Thierry’s great-grandfather, Jean-Baptiste Pillot, decided
to focus on viticulture rather than barrel-making, after
having done both for some time. After the First World War,
his two sons, Alphonse and Henri, took over the domaine and
continued to accrue more vineyard holdings. The brothers
eventually went their separate ways and Henri was succeeded
by his son Paul in 1968.
It was Thierry’s father Paul who really extended the
holdings of the domaine to include the top-flight vineyards
for which the domaine is now famous. The domaine’s vineyard
holdings are truly exceptional indeed, and they read like an
all-star line-up of the village of Chassagne: Champs
Gains, Grande Montagne, Caillerets, La
Romanée and Grandes Ruchottes, just to name a
few.
Thierry started at the domaine in 1999 and his sister
Chrystelle (who’s married to Arnaud Mortet of
Gevrey-Chambertin) arrived in 2003 to assist him full-time,
making this truly a family operation. Between them they have
collective winemaking experience in Australia, South Africa
and Oregon. Their father, Paul, remains active in the
domaine, helping his children wherever he can.

Thierry has inherited his family’s tradition of meticulous
viticulture, which has spanned generations. With a
predilection towards a crystalline, “salty” character in his
wines, Thierry picks early and adopts an élevage that allows
the soil to speak in order to achieve this. Winemaking
duties are always discharged with a sensitive hand. Natural
fermentation and no additives, save for minimal sulphur, are
customary. The new oak regime is kept to a minimum (about
half of what his father used), allowing terroir differences
to come into the foreground. Thierry uses more 350-litre
barrels in his cellar nowadays, having been convinced that
they offer a good balance of oxygenation and subdued oak
flavour, and sticks to traditional long ageing periods of
between 12 to 18 months. He does not perform bâtonnage
(lees stirring), and the wines are never racked. All of
these decisions take courage but are fundamental to making
great terroir-driven wines.

And he’s right.
The resulting wines are harmonious and, most importantly,
exemplify their origin. They have a silky acidity,
emphasising vibrant mineral character.
The wines that Domaine Paul Pillot is turning out at the
moment are some of the most compelling, vivid expressions of
red and white Burgundy that we have been introduced to in
some time. There is a haunting elegance and finesse in the
wines such that at times, if tasted blind, one may be
forgiven for thinking that they are in Puligny. It is
domaines like this one that make Chassagne the most exciting
and dynamic white wine village in the Côte de Beaune.
It is no surprise that Thierry is great friends with Vincent
Dancer, Marc Bachelet, Arnaud Mortet and many of the other
young guns of Burgundy, for they are all part of a
revolution that has been sweeping through the Côte d’Or: a
zeitgeist propelled by a new generation, winning the world
over. It is plain to us, and to regular visitors like Allen
Meadows, that this invigorated address now bears comparison
with the very best that Chassagne has to offer.
Domaine Paul
Pillot’s 2018s continue the estate’s
bull-run of recent years. These wines are
breathtakingly beautiful. The vintage is unabashedly
generous, but in Thierry’s hands, we once again see
a rare purity and clarity that many of the
better-known domaines simply cannot match. These are
truly unforgettable, seductive wines that are
amongst the very best in Burgundy. They are not to
be missed. |
While many of us will spring immediately for the domaine’s
whites, we have one word of advice: do not miss the reds
here. Chassagne, like Sancerre in the Loire, was an
appellation originally lauded for its Pinot Noir. Pillot’s
spicy, incisive and stylish expression makes a strong case
for keeping the Pinot tradition alive. As for the whites –
run, don’t walk. These are wines that you’ll be
scrambling to track down each year once you experience how
mesmerising they can be.
