living in a golden age of Champagne, with
producers both large and small not only refining
their vinification methods but also exploring
issues of viticulture and terroir expression in
exciting new ways.

No development encapsulates this era of rigour and
experimentation as much as the rise of grower
champagnes — Champagne made by vignerons
(wine growers) from their own vineyards, vinified and
bottled by the same craftsmen, in artisanal quantities.
At Artisan Cellars, we are relentless in our quest to
discover and curate quality and style leaders from this
beloved region. Over the years, we have faithfully tracked
and enlisted the most cutting-edge growers and watched not
a few attain cult status and superstardom along the way.
We are stoked to share some of our most cherished
discoveries in person during this hang-out session with
one of the foremost experts on Champagne, Peter Liem,
at the handsome new wine bar Le Bon Funk on Club
Street.
Peter’s knowledge
of and passion for Champagne — the region, the people and
the wines — put him in a very special position on the
topic. Few can speak with the authority, clarity and
conviction about Champagne that Peter possesses. His
latest book on Champagne, a labour of love and lifelong
research simply titled CHAMPAGNE is a
must-have for all Champagne lovers and has won a number of
awards since its release last year. In April this year, we
were delighted for Peter when his book was named Winner of the 2018 James Beard
Foundation Cookbook Award in “Reference,
History, Scholarship” — a coveted and prestigious
achievement for an author.

Champagne through this tasting flight. Peter has selected
two special cuvées each from three of his favourite
grower-producers, providing an interesting opportunity to
compare and contrast between terroirs, producers, and
their cuvées. Enjoy a drink and a chat with Peter while

Peter
Liem is an American wine writer, and author of ChampagneGuide.net, an
award-winning online guide to the wines and wine
producers of Champagne. Following nearly a
decade in the wine trade, he was a senior
editor, critic and tasting director for Wine
& Spirits magazine, and his writings
on champagne, sherry and other wines have
appeared in publications such as The World
of Fine Wine, Decanter, The
Art of Eating and The San Francisco
Chronicle. He has authored, together with
Jesús Barquín, “Sherry, Manzanilla &
Montilla”, and he hosts Sherryfest,
one of the world’s largest sherry events,
together with Rosemary Gray. He has also
partnered with Daniel Johnnes of La Paulée
de New York to create La Fête du
Champagne, the largest Champagne
event in the United States. His most recent
book, “Champagne”, was published by Ten
Speed Press in October of 2017: it has been
awarded the André Simon Book Award and
an IACP Book Award, and the extremely
prestigious 2018 James Beard Foundation
Award.

The Lo & Behold Group and Chef-Owner, Keirin
Buck. Le Bon Funk brings ‘fine casual’ to
Singapore’s bar and nightlife realm with its
distinctive blend of considered hospitality,
exceptional boutique wines and elevated,
meticulously prepared plates.
Keirin Buck (left), who leads the
communal dining programme, is joined by Head
Sommelier-Manager, Josée Yeomans (right),
the charismatic ingénue behind the bar’s
natural wine programme.

Buck presents a communal dining programme that
is unfussy yet deeply satisfying. The
ever-evolving menu is a true reflection of
Buck's culinary philosophy, utilising
ingredients at the peak of their quality across
the seasons. Curated by Head Sommelier Josée
Yeomans, Le Bon Funk’s ever-evolving living wine
list is a celebration of people over place —
winemakers over wine regions, leisure over
labels.
While Buck and Yeomans are indeed fanatical
